Ingredients:
1 bunch chard
1/2 tbsp olive oil
2 garlic cloves, minced or thinly sliced
1/4 tsp sea salt, plus more for taste
black pepper
lemon wedge, for squeezing
*nutritional yeast, sprinkle (optional, see notes below)
*hemp hearts, sprinkle (optional, see notes below)
*feta cheese, crumbled and sprinkled (optional, see notes below)
*1/2 can of chick peas, drained and rinsed (optional, see notes below)
Instructions:
Slice the stems off the chard leaves and chop them into 1/4 inch slices.
Coarsely chop the leaves.
Heat the olive oil in a large skillet over medium heat. Add the chard stems and cook for 1 to 2 minutes, or until they begin to soften. Add the chard leaves, garlic, salt and black pepper and sauté for 1 to 2 minutes, or until the leaves are wilted and bright in color.
Turn off the heat, squeeze a little lemon juice over the chard, and toss. Season to taste and serve.
*Notes:
Sometimes I sprinkle a little nutritional yeast over the top after cooking for a nutty/cheesy flavor.
Add some hemp hearts on top after cooking for some added nutrition and texture.
Add feta cheese on top of already cooked chard.
Rinse, drain and add 1/2 a can of chickpeas to this recipe for a fuller meal. Simply add chickpeas to skillet and cook alongside chard.
